Not so new an idea. I made scoby mash for composites and in kombucha gastronomy, it is not uncommon to mix scoby mash and fruit, to dry into tastful, nori seaweed like culinary creations.
What I didn’t try yet was blending a scoby and drying the mash on its own on top of a fine-mesh textile sitting on felt and paper to absorb & drain the moist.
Leads to a nice material, that acquired the imprint of the textile in microscope views.
Looking forward to scale up and explore possibilities in more depth.
